
Bobby is reading the “Vampire Academy” series of books. They are actually Katie’s, and she read them, but now Bobby has taken to them. He figured out that if he reads 3 chapters a day, he will finish the book series by the end of the summer. Good goal!
I made some fried rice with Bobby for lunch today. Since both kids are vegetarian now, we are trying to determine foods that they can eat which are not processed. They are not only healthier, but will help us to save money as well. I asked him what he wanted in it, and after giving him a series of options, he decided up only rice, corn, and black beans. So, here’s the recipe we came up with:
- Cook I cup of rice grains with 2 cups of water in the Instant Pot.
- Put two tablespoons of vegetable oil into a frying pan. Heat till boiling.
- Add rice, a can of corn (drained), and a can of black beans (rinsed).
- Stir and heat for about 5 minutes.
Bobby had two bowls of this vegetable stir fry and asked for a bit more, so it’s a hit!
I picked up Katie at Spence’s Farm today for the last day of equestrian summer camp. She wants to leave at 2:30pm rather than 3:00pm so that she can get out of “acknowledgements”, something she hates…
Katie is started to draw on toned paper now (see photo to the left).
Bobby made a dinosaur/dog/animal out of green Play Doh this evening.
